Fruit Leather (Bark)

A variety of different recipes can be used for fruit leather. Since I do not have a dehydrator, I prefer quicker recipes that require only a short time in the oven. Also, unless you have a large amount of fresh fruit that needs to be preserved, I prefer to use a larger percentage applesauce with fresh fruit mixed in, just to minimize cost.
  • 2-1/2 cups applesauce
  • fresh fruit as desired
  • 1 tsp honey
Preheat oven to 250F. The ingredients are just a rough estimate. Put applesauce and fruit in a food processor. Add some honey and lemon juice. Process until smooth. Spread the mixture on a parchment-lined baking sheet to 1/8 inch thickness or greater as desired, but make sure the thickness is even throughout. Bake 2-3 hours. It should no longer be sticky to the touch. Let it sit and cool at room temperature, and the bark should "soften" some. 

Make several batches and put them on different racks in the oven so you have plenty to eat when you're done!
